Comments on Thyme: Thyme is grown in Algeria, China, Israel, Russia, Turkey, Tunisia and the US.~Because of hundreds of different varieties of Thyme, the consumer should be very careful when purchasing and using this oil.~There is a pink flowered variety which yields a superior oil to that of the white flowered variety.~The oil is steamed twice to remove irritant substances present in this plant.~The initial distillation of T. vulgaris produces Red Thyme, which is often referred to as a crude distillate.~Further distillation produces White Thyme, which is considered to be less harsh.~Thyme labelled "Sweet Thyme" is also a bit more gentle than the "Red" variety and should be called Thymus Vulgaris CT linalol.~Thyme is one of the most powerful antiseptics and is particularly important in the production of white blood cells to fight infections.~Thyme has the rare property of counteracting adrenaline spasms.~This helps balance the adrenal cortex system where there is an over production of adrenaline hormones that can cause the kidneys and the digestive system to malfuction.~It is also known to calm spasms caused by too much acetylcholine (as do Sage and Melissa).
